Cucumber Salsa Recipe


This cucumber salsa recipe is quick and easy. It seems to goes well with all sorts of seafood.

We have made it for a few of our favorite seafood recipes and it's excellent!

We've tried it with grouper, salmon, scallops and shrimp. We are going to try it with some cracked conch next!

Make it a day ahead of time and refrigerate to let the flavors blend, but if you can't wait, enjoy it immediately, it's still tasty.

Cucumber Salsa Recipe

Ingredients:

  • 1/2 cucumber
  • 2 Roma tomatoes
  • 1/2 onions
  • 2 T. fresh lemon juice (or to flavor)
  • salt to taste


Preparation:

Cut all ingredients into small pieces, add lemon juice and salt.
Place it in a air tight container.
Refrigerate for a couple of hours so the flavors have a chance to blend. The longer the better.

If needed, be sure to change the amounts of the ingredients to suit your personal taste!


Wine Pairing:

You can't go wrong with a nice light white wine with the seafood and salsa. But remember, anything goes with Carona, or Red Stripe, or Kalik...!
