Mango Salsa


This is an excellent mango salsa recipe. It's easy to make and can be put together in short order.

This salsa has been enjoyed with family and friends over barbecues and weekend get togethers.

It seems to go well with most of our seafood recipes.

We whipped up a quick snack the other day and made some shrimp tacos. We added some salsa, and it worked perfectly with the tacos!

This dish is also a real eye pleaser. Beautiful colors makes this look good on any table. Try it at your next get together!




Mango Salsa

Ingredients:

  • 2 ripe mangos
  • 1/2 red onion
  • 1/2 each yellow,red and green pepper
  • 2 T. freshly squeezed lime juice
  • 8 fresh mint leaves


Preparation:

Dice the mango, onion and peppers into small cubes.
Add the lime juice.
When adding the mint leaves, start with 8 and chop them fine and add to the mix.
Adjust the amount of mint to your taste.
Some people like to add Jalapeno peppers for a little heat. You could also try Habenero or Scotch Bonnets.
Experiment, make it your own and enjoy.

Change the amounts of the ingredients to suit your taste. More mango and less green pepper makes the salsa sweeter to the taste. More onion and more green pepper, well, you know!


Wine Pairing:

A light white wine with the seafood. But remember, if it's NFL Sunday, beer works too!
